Enriched Sweet Dough
Sweet breads are beautiful shaped loaves filled with delicious fruit and other ingredients, perfect for special occasions and events when you want to impress, or a wonderful accompaniment to any afternoon tea or supper.
You will make a variety of different sweet breads, containing heritage grains from our selection, and packed with fruit, nuts and seeds to create delicious flavours.
You will also have the opportunity to mill some of these heritage grains in our specialist milling machine. Seasonal ingredients and shapes will be used according to the time of year.
Examples include brioche, pain aux raisins, apricot couronne, other fruit-based loaves and many more!
This course can be adapted for vegans.
