Storecupboard Vegan Treats (Gluten Free)

These storecupboard vegan treats are healthy and delicious.  As well as being vegan, they are also naturally gluten free.  You can adapt the recipe according to your taste and what you have available in your kitchen cupboards.  There are endless options, so have fun experimenting!

For example, instead of ground almonds you could use any other type of nuts (I love cashew nuts).  You can swap the clementine for any other citrus fruit – lemon is one of my favourites.  I’ve also made these with frozen cherries before instead of dried fruit.  For variety, you can also try adding in different types of seeds such as chia seeds, flaxseeds or pumpkin seeds.

These are so easy to make, you can get your children involved too.  Once you have blended the ingredients, you just shape them into balls with your hands, so even little ones can have a go. They are a healthy alternative to baking traditional cakes and biscuits.  They can also be a fun way to introduce foods that they might not have tried before.  Let them choose their favourite ingredients to create their own special treats!

I haven’t included precise measurements for this recipe as I never make it the same way twice.  Just add a little bit of this and a little bit of that, tasting as you go, until you are happy with your creation!

Making these treats with healthy ingredients such as ground nuts and dried fruit means you can enjoy spoiling yourself whilst also giving your body lots of vital nutrients.  Here’s how to do it:

Equipment

  • food processor

Ingredients
  

  • ground almonds
  • dried apricots
  • dried apples
  • dried berries
  • desiccated coconut
  • zest of a clementine
  • juice of half a clementine
  • dates
  • vanilla extract
  • vegan dark chocolate

Instructions
 

  • Blitz all your ingredients together (except the dark chocolate).
  • Taste the mixture to make sure it's to your liking and adjust as needed.
  • Roll into balls and put in the fridge for 20 minutes.
  • Melt the dark chocolate in a Pyrex bowl over a saucepan of hot water.
  • Dip the balls into the melted chocolate and ensure they are evenly coated. You can sprinkle some extra dried fruit or desiccated coconut on the top to make them look pretty.
  • Once the chocolate has set, store in an airtight container. Keep refrigerated or store in the freezer.
