Victoria Feldman, head of Canterbury Baking School, has been vegetarian since the age of 18, with a vegan husband. Over the years she has created some marvelous healthy eating recipes, as well as helpful tips and tricks to share. Vegetarian cooking is first and foremost about being creative whilst also being nutritious and that is what we hope to teach!
Vegan substitutes you can buy in the supermarket do have a place, but for a balanced diet you will need to learn a new way of cooking and experiment with new ingredients. This vegetarian cooking class will allow you to do that under Victoria’s expert guidance.
If you’re bored of beans, don’t worry! This workshop gives you the opportunity to try some delicious fresh, organic, seasonal ingredients and some more unusual and exotic vegetables. Victoria will also give you some troubleshooting tips so bring along any questions you may have about vegan cooking. Go home with a greater understanding of how to meet your nutritional requirements on a vegetarian diet and feeling better equipped to prepare delicious healthy dishes.

The exact recipes used on the day will be adjusted according to your likes and dislikes, but you will make:
- Starters or side dishes such as houmous, guacamole, or vegan pate
- Family friendly recipes e.g. moussaka, lasagne, or tofu burgers
- Italian style vegan ice cream plus a cake, biscuit or other dessert
- A healthy cheese substitute using cashew nuts
You will learn:
- How to ensure you have a balanced meal on a vegetarian/ vegan diet.
- An understanding the nutritional value of food.
- How to make satisfying meals so you don’t feel you’re missing out
- How to ensure you get enough protein for your dietary needs
- How to make a meal plan to ensure you’re getting a balanced diet, with enough meal ideas for a week.

- Casserole dish of food you have cooked
- Meal plan for a week
- Laminated copy of the recipes taught on the day
