Basic and Artisan Bread

Due to popular demand we are offering a course for beginners, home bakers and those who wish to build confidence coupled with learning more advanced techniques in our bread making workshop.

You will make a variety of different basic and artisan breads, using two different doughs, containing two different heritage grains from our selection.  You will also have the opportunity to mill some of these heritage grains in our specialist milling machine. Seasonal ingredients and wild herbs will be used according to the time of year.

You will make one dough with oil and one without, giving you the opportunity to experience the difference between these two doughs and working with them and taste.

Our breads also incorporate sourdough preferment, which enhances the nutritional value of the bread, and is an ideal way to get the health benefits of sourdough in a shorter time.

You will learn:

  • How to work the dough
  • How to incorporate sourdough preferment into bread dough
  • Shaping different types of loaves and rolls
  • Proving times
  • How to tell when your bread is cooked
  • Storing bread in the freezer
  • How to introduce additional ingredients to the bread such as seeds, olives, pesto, or nuts to create different flavours and textures.
  • The art of scoring bread.
  • More advanced techniques for forming bread.

And most importantly, you will develop an understanding of how the bread should feel and react at each stage of the process, so that you can replicate it at home with confidence.

You will take home with you:

  • Breads that you have baked yourself
  • Laminated copy of the recipes taught on the day
